[VEGAN] black sesame ginger muffins

Black Sesame Ginger Muffins
Serves: 12

2/3 cup black sesame seed
1 cup candied ginger, minced
1 3/4 cup all purpose flour
1 cup almond meal/flour
2 1/2 tsp baking powder
1/2 tsp salt
3/4 cup sugar
2 tbsp chia seeds
1/2 cup applesauce
1 tbsp lemon juice
2 tsp water
1 cup soy milk

1. Preheat oven to 350 F
2. Mix first 8 ingredients in a large mixing bowl
3. Make a well in the center of dry mixture and add in the rest of the ingredients
4. Stir until just combined
5. Bake for 18-20 minutes, until tops spring back or toothpick comes out clean
