[VEGAN] apple cider donuts 🍎🍁

Apple Cider Donuts
1 cup all purpose flour
1 1/2 tsp baking powder
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp allspice
1/2 tsp salt
1/3 cup maple syrup
1/3 cup finely diced apple (I used a food processor)
1/4 cup unsweetened apple sauce
2 tbsp apple cider or water
1 tbsp coconut oil, melted
1 tsp vanilla extract

Apple Cider Glaze
1/2 cup powdered sugar
1/2 tbsp apple cider or water

Cinnamon Sugar Topping
2 tbsp granulated sugar
1 tsp cinnamon
1/8 tsp nutmeg


1. Preheat June Oven to 350°F. Use a silicone donut pan, or lightly grease a metal donut pan.

2. In a small bowl combine flour, baking powder, baking soda, spices, and salt. In a separate bowl whisk together maple syrup, diced apple, apple sauce, cider or water, coconut oil, and vanilla extract. Add wet ingredients to dry and mix until just combined.

3. Evenly spoon batter into donut pans, batter should be 3/4 to the top. If you fill them to the top, your donuts will turn into muffins.

4. Bake for 15 minutes, until donuts springs back when gently pressed and toothpick inserted in the middle comes out clean. Remove from oven and let cool in pan for a few minutes before transferring donuts onto a cooling rack to cool completely.

5. To make the glaze, whisk together powdered sugar and apple cider or water in a small shallow bowl. In a separate bowl, combine ingredients for cinnamon sugar topping.

6. Once donuts have cooled, dip the tops of each one into the glaze. Immediately sprinkle with cinnamon sugar.
